Hi Everyone,
Today for #SundaySupper our mission was to make something that will beat the heat and is served cold! I couldn’t think about anything more refreshing than a mouth quenching drink. Well a drink with a little bit of rum in it! He he One of my favorite all time summer drinks that really cools me off is a mojito. I love them because they are minty, light, refreshingand served with lots of ice. I decided to change-up the traditional mojito and add watermelon to it! Oh yeah! Nothing more quenching in the summer than watermelon. So today I have for you my Skinny Watermelon Mojito.
This drink is simply amazing! It is made with fresh watermelon that I blended in a blender. Freshly squeezed lime juice, peppermint leaves, white rum and club soda. This drink is light, fresh, sweet and simply delicious. One thing I have to admit, the last time I made this drink the watermelon wasn’t super sweet, so I added a pinch of sugar to it. Today’s recipe the watermelon was so sweet that no sweetener was needed. So if your watermelon is not sweet enough, by all means mix in a pinch of sugar, stevia or even honey.
Ohhhhh I am just so excited for the summer! I have to admit though the temperatures have been quite warm here in California. This past week is was in the low 100’s and even the most quench thirsting drinks will not cool you off. So if it’s hot where you are, go to the mall in the air conditioning! 🙂 Nothing beats the heat like retail therapy! lol But really, if it’s hot stay indoors and make sure your pets are indoors too!!
Skinny Watermelon Mojito

A light, refreshing, skinny co*cktail made with watermelon, mint, rum and club soda.
Serves: 1 serving
Ingredients
- 1 cup watermelon, seeded roughly chopped
- ½ lime, juiced
- 4 mint leaves
- ice
- 1 fl. oz. Bacardi Rum (use white rum)
- club soda
Instructions
- In a blender, process watermelon until liquefied. Pour into a glass.
- In a small bowl, muddle together the lime juice and mint leaves. Pour over the top of the watermelon. Fill the glass with ice and top with rum and club soda.
- Garnish with mint leaves and watermelon wedge if desired.
- Note: If the water melon is not to sweet, add ½ tsp. of fine sugar.

Yea, watermelon!! I made a watermelon mojito last week (though I don’t think mine was skinny) and it was so, so delicious and refreshing. I love your glassware, such gorgeous pictures!

Hi Danielle, I would say you can make ahead, except fort eh Club Soda. Don’t add that until you are ready to serve. Enjoy!
